My girls are huge fans of chicken nuggets, I think they could eat them everyday. I do not mind them either, just as long as they are not the frozen variety. I much prefer making them myself. These nuggets are fairly easy to make and bake up nice and crispy.
My girls also enjoy dipping their nuggets in sauces, in fact I am not sure if they could eat them without sauce to dip them in. When I came across a recipe for these two sauces I figured I would give them a try, it would be a nice change of pace from their normal ranch and ketchup.
Both sauces were a hit. The spicy ketchup was very good with a very good kick. My youngest liked it and ate it, but did say it was a bit too spicy. The honey mustard was very good as well, in fact it was one of the better honey mustards I have had.
Baked Chicken Nuggets
Ingredients:
- 1 cup panko breadcrumbs
- 1/3 cup grated parmesan cheese
- 2 boneless, skinless chicken breasts, cut into about 1 inch pieces
- 1/4 cup all purpose flour
- 1 egg, lightly beaten
- 1/2 tablespoon water
- Preheat oven to 450 degrees. Place a cooling rack onto a rimmed baking sheet and spray well with cooking spray.
- In a shallow bowl combine panko and parmesan cheese.
- In another shallow bowl add egg and water, slightly beat with a fork.
- In a third shallow bowl add flour. You may need more flour depending on the size of your chicken breasts.
- To dredge the chicken, first coat it in flour then egg and lastly coat it well in the panko.
- Place the chicken nuggets onto the cooling rack and bake for about 10 minutes, or until the chicken is cooked completely.
Honey Mustard Sauce
Ingredients:
- 3 tablespoons dijon mustard
- 2 tablespoons light mayonnaise
- 2 tablespoons honey
- Combine all ingredients well.
Spicy Ketchup
Ingredients:
- 1/4 cup ketchup
- 2 tablespoons spicy chili sauce
- 2 tablespoons light mayonnaise
- Combine all ingredients well.
