This bread tastes like banana bread but with a very subtle sweetness from the coconut. It is nice and moist and even better it is healthy.
Coconut Banana Bread
Ingredients:
- 1 3/4 cup all purpose flour
- 1 teaspoon baking powder
- 1 1/4 teaspoon baking soda
- 3 large ripe bananas, mashed
- 1/2 cup + 2 tablespoons sweetened flaked coconut
- 1/2 tablespoon olive oil
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 3 egg whites
- 2 tablespoons fat free milk
- 1/4 cup fat free plain Greek yogurt
- 1/4 cup orange juice
Directions:
- Preheat oven to 350 degrees.
- Combine the flour, baking powder, baking soda in a medium bowl and set aside.
- In a large bowl combine the mashed banana, brown sugar, and vanilla.
- Add in the egg whites and mix until smooth.
- Mix in the olive oil.
- Slowly mix the flour mixture into the banana mixture combining until just moist.
- Add in Greek yogurt, orange juice, and milk, mixing just until incorporated.
- Add in 1/2 cup coconut and mix until just evenly distributed.
- Pour the batter into a greased 9x5 loaf pan.
- Sprinkle with remaining 2 tablespoons of coconut on top and bake for 50-60 minutes or until an inserted toothpick comes out clean.
