Buffalo Chicken Pasta


When life gets chaotic a simple and easy dinner is just what I need. But that dinner also needs to be delicious and this dish definitely is. It is a creamy, cheesy and spicy pasta goodness.

Buffalo Chicken Pasta

Ingredients:

  • 8 ounces penne pasta
  • 8 ounces cream cheese, softened
  • 3/4 cup ranch dressing
  • 1/3 cup Frank's hot sauce
  • 2 cups cooked, shredded chicken
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • chopped green onions, optional

Directions:

  1. Preheat the oven to 375º F. Spray a 8 inch casserole dish with cooking spray.
  2. Cook the pasta according to the package directions and drain.
  3. In a large bowl combine the cream cheese, ranch dressing and hot sauce until well combined. Add in the chicken, 1/2 cup mozzarella cheese and cooked pasta. Stir until everything is well combined.
  4. Transfer the mixture to the prepared baking dish and top with the remaining mozzarella and all of the cheddar cheese.
  5. Bake for 20 minutes, or until the cheese is melted and everything is warmed through. Garnish with sliced green onions if desired.
