Raspberry Chipotle Chicken

Raspberry Chipotle Chicken: Savory Sweet and Satisfying

Seasoned chicken breasts are covered in a sweet and spicy raspberry chipotle sauce. When cooking the chicken breast you can cook them your preferred way. I cooked them in a skillet, but you could use the oven or a grill. Just don't forget to season them with black pepper first.

Raspberry Chipotle Chicken

Ingredients:

  • 4 boneless skinless chicken breasts
  • ground black pepper, to taste
  • 1 cup seedless raspberry jam
  • 1/2-1 tablespoon pureed chipotle peppers in adobo sauce, depending on how spicy you want it
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Directions:

  1. Season both sides of the chicken breasts with black pepper and cook your preferred way until completely cooked.
  2. While the chicken is cooking, add the jam, pureed chipotle peppers, apple cider vinegar, garlic powder and onion powder to a small saucepan and stir to combine. Bring the mixture to a boil, stirring occasionally, and then remove from the heat.
  3. Serve the sauce over the cooked chicken breasts.
