Chicken Cordon Bleu Soup

Chicken Cordon Bleu Soup: Savory Sweet and Satisfying

What do you do when you are cleaning out your freezer and need to use up some ham? You take the flavors of chicken cordon bleu and put them in a rich, creamy and cheesy soup.

Chicken Cordon Bleu Soup

Ingredients:

  • 1/4 cup unsalted butter
  • 1/4 cup all purpose flour
  • 2 1/2 cups half and half
  • 2 1/2 cups milk
  • 1 tablespoon chicken base
  • 8 ounces cream cheese, room temperature
  • 2 1/2 cups cooked, shredded chicken
  • 1/2 cup cooked and crumbled bacon
  • 1 cup cubed ham
  • 2 cups shredded Swiss cheese

Directions:

  1. In a large pot melt the butter over medium heat. Add in the flour, stir and cook for 1 minute.
  2. Slowly add in the half and half, milk and chicken base, while whisking. Heat for a few minutes, until mixture is slightly warm.
  3. Add in the cream cheese and stir constantly until the mixture comes to a boil.
  4. Stir in the chicken, bacon and ham.
  5. Reduce the heat to low and stir in the shredded cheese until melted.

Notes:
Instead of the chicken base you can substitute it for 2 chicken bullion cubes, crushed.

I used turkey bacon.
