Corned Beef Nachos

Corned Beef Nachos: Savory Sweet and Satisfying

These nachos are a bit different than the "traditional" nachos. Instead of tortilla chips, they are made with sliced potatoes. The meat choice for these nachos is delicious corned beef. In my opinion the corned beef is what really made these nachos super delicious. I may be a little biased because of my love for corned beef,  but it is a great way to use up some leftover corned beef.

Corned Beef Nachos

Ingredients:

  • 5 medium russet potatoes
  • 1/4 cup olive oil
  • 2 cups shredded cheddar cheese
  • mounded 1/2 cup shredded corned beef
  • 4 green onions, sliced
  • 1 tomato, diced
  • Toppings (not included in the nutritional information)

  • jalapeños
  • sour cream
  • guacamole

Directions:

  1. Place some cold water into a large bowl. Slice the potatoes 1/4 inch thick and place in the bowl with the water. Let the potatoes sit for 20 minutes in the water. Drain the potatoes well and dry well with paper towels or clean kitchen towel.
  2. Preheat oven to 400º F. Line a baking sheet with parchment paper.
  3. Toss the potatoes with 1/4 cup olive oil. Place the potatoes onto the prepared baking sheet and bake for 30-40 minutes or until browned and crispy.
  4. Turn oven heat to 475º F.
  5. In a deep dish pie plate, lay down half of the potatoes. Then top the potatoes with half of the corned beef, half of the green onions and half of the cheese. Place the remaining potatoes down, followed by the remaining corned beef and cheese. Save the remaining green onions serving.
  6. Bake for 15-20 minutes, or until heated through and cheese is melted. Top with diced tomatoes and remaining green onions and any additional toppings you choose.
