Red Beans and Rice

Red Beans and Rice: Savory Sweet and Satisfying

This side dish is simple to prepare and comes together quickly. Which makes it perfect for those busy nights. Plus it is made in one skillet and is definitely not lacking in flavor.

Red Beans and Rice

Ingredients:

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 cup white rice
  • 1 tablespoon cajun seasoning
  • 1 teaspoon garlic powder
  • 1 cup no salt added tomato sauce
  • 2 cups low sodium chicken broth
  • 15 ounces red beans, rinsed and drained

Directions:

  1. In a large skillet, heat the olive oil over medium high heat. Sauté the diced onions and bell pepper for 2-3 minutes, or until slightly softened.
  2. Add in the rice, cajun seasoning and garlic powder, cook stirring constantly until the rice is slightly browned, about 2 minutes.
  3. Add in the tomato sauce and chicken broth, stirring to combine. Bring the mixture to a boil, add in the beans, stirring to combine. Cover the skillet, reduce the heat to low and simmer for 15-18 minutes or until the rice is tender. Fluff the rice with a fork and serve.

Notes:
This dish can easily be doubled to feed more people.

You can add 12 ounces of sliced andouille sausage to the skillet with the onions, for a more complete meal.
