Peppermint Bark Ice Cream

Peppermint Bark Ice Cream: Savory Sweet and Satisfying

I have always been a fan of peppermint bark, but it never seems to last long in my house since my girls are fans of it too. This year however, I purposely bought 2 extra bars and told the family not to eat them, I needed them for a recipe.

It took me awhile to make this ice cream, but the wait was well worth it. Simple vanilla ice cream full of delicious peppermint bark pieces.

Peppermint Bark Ice Cream

Ingredients:

  • 1 cup half and half
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1 tablespoon vanilla extract
  • 2- 3.5 ounce bar peppermint bark, regular or dark

Directions:

  1. Place freezer safe container for storing the ice cream in the freezer.
  2. In a medium bowl whisk together the half and half and sugar until the sugar dissolves. Stir in the heavy cream and vanilla.
  3. Pour the mixture into your ice cream machine and churn according to manufacturer's directions.
  4. While the ice cream is churning, break the peppermint bark into small pieces. During the last 5 minutes of the churning time add the peppermint bark pieces.
  5. Take the storage container out of the freezer and transfer ice cream into it. Cover and freeze.
