Pumpkin Spice Latte Muffins: Savory Sweet and Satisfying

Pumpkin spice and coffee come together in this delicious muffin. There is pumpkin spice and coffee in the muffin and then the muffin is coated in sugar and pumpkin spice for just enough pumpkin spice and coffee flavor.

Pumpkin Spice and Latte Muffins

Ingredients:

    Muffins

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 2 tablespoon espresso powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup canola oil
  • 1/2 cup fat free milk
  • Topping

  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon pumpkin pie spice

Directions:

  1. Preheat oven to 375º F. Spray a muffin tin with cooking spray and set aside.
  2. In a medium bowl whisk together the flour, baking powder, pumpkin pie spice and espresso powder.
  3. In a large bowl whisk together the sugar, eggs, vanilla, canola oil, and milk. Slowly stir in the dry ingredients, just until combined.
  4. Evenly divide the batter into the prepared muffin tin. Bake for 18-23 minutes or until and inserted toothpick comes out clean and the tops of the muffin are golden.
  5. Cool for 10-15 minutes in the muffin tin.
  6. Whisk together the granulated sugar and pumpkin pie spice. Dip the tops of the muffins into the melted butter and then into sugar and pumpkin pie spice mix.
