Tuna Pasta Salad with Olives: Savory Sweet an Satisfying

My oldest daughter has taken to helping me cook. She is always asking if she can help make meals. When my youngest was younger she always wanted to help, but now my oldest is enjoying helping, especially when she can use a knife and cut things. She loved slicing the olives and tomatoes for this recipe which came together even quicker with her help.

Tuna Pasta Salad with Olives

Ingredients:

    Tuna Pasta Salad

  • 16 ounces rotini pasta
  • 4 cups halved grape tomatoes
  • 4- 6 ounce cans tuna fish, drained
  • 1 cup sliced green olives
  • Lemon Garlic Vinaigrette Dressing

  • 2 clove garlic, minced
  • 2 lemons, zest
  • 1/3 cup olive oil or extra virgin olive oil
  • 1/4 cup water
  • ground black pepper, to taste

Directions:

  1. Cook the pasta according to the package directions. Drain and rinse with cold water. Set aside and let cool, about 5 minutes.
  2. Transfer the pasta to a large bowl. To the pasta add the tomatoes, tuna fish and green olives. Toss gently to mix.
  3. In a medium bowl whisk together the the garlic, lemon zest, lemon juice, olive oil, water and black pepper. Continue to whisk until throughly combined.
  4. Pour the dressing over the pasta salad and toss to coat.
