Southwest Salad with Garlic Lime Dressing: Savory Sweet and Satisfying

Doritos is a favorite chip of my family, but we do not have them very often. But if a recipe calls for them, well of course I need to buy them to make the recipe. Plus Doritos always seem to make a great recipe even better, like my Taco Salad. It tastes great, but the Doritos make it taste even better. Same goes for this salad, it tastes great, but the Doritos make it taste even better.

Southwest Salad with Garlic Lime Dressing

Ingredients:

    Salad

  • 2 boneless skinless chicken breasts
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • black pepper, to taste
  • 8 cups chopped romaine lettuce
  • 3/4 cup shredded cheddar cheese
  • 1 can low sodium beans, any kind, drained and rinsed
  • 1 1/2 cups frozen corn, thawed
  • 2 roma tomates, diced
  • 2 cups crushed nacho cheese Doritos
  • Dressing

  • 3 tablespoons honey
  • 2 limes, juiced, about 3 tablespoons
  • 1 small garlic clove, minced
  • 1/4 teaspoon cumin
  • black pepper, to taste
  • 1/4 cup canola oil

Directions:

  1. In a small bowl combine 1 teaspoon cumin, 1/2 teaspoon chili powder and black pepper.
  2. Sprinkle and rub the seasoning over both sides of the chicken breasts and cook your preferred way. Once cooked let the chicken cool and then dice or slice into pieces.
  3. Divide the lettuce between 4 bowls and then divide the cheese, beans, corn, tomatoes, chicken and place on top of the lettuce.
  4. Top each salad with crushed Doritos.
  5. Add all of the dressing ingredients to a blend and pulse until the mixture has emulsified. Drizzle the dressing over the salads.
