Parmesan Crusted Chicken Tenders: Savory Sweet and Satisfying

It seems if I take chicken breasts and turn them into strips and then bread them and serve with dipping sauces my kids are very willing eat them up. I do not know if it is that they can dip them or eat them with their hands or the combination of the two, but I do not think I have made a chicken strip they have not liked.

Parmesan Crusted Chicken Tenders

Ingredients:

  • 1/2 cup panko bread crumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 cup shredded parmesan cheese
  • 2 eggs
  • 1 pound boneless skinless chicken breasts
  • 4 teaspoon olive oil

Directions:

  1. Preheat oven to 400º F. Place a wire cooling rack on a rimmed baking sheet. Spray the cooling rack with cooking spray. Set aside.
  2. In a shallow bowl whisk together the bread crumbs, garlic powder, onion powder, black pepper and parmesan cheese.
  3. In another shallow bowl whisk the eggs.
  4. Cut the chicken into strips and then working with one strip at a time dredge it into the egg, coating all sides. Then dredge the chicken strip into the bread crumbs pressing down to coat all sides well and place on a plate.
  5. In a large skillet heat 2 teaspoons olive oil over medium high heat. Add half of the breaded chicken strips and cook until golden brown on one side, about 3 minutes. Turn the chicken over and cook on the other side until golden brown, about 3 more minutes. Transfer to the prepared cooling rack. Add the remaining 2 teaspoon olive oil and repeat with the remaining chicken strips.
  6. Bake until the chicken strips are completely cook through about, about 5-10 minutes. Serve with your choice of dipping sauces.
