Mexican Pizza

Mexican Pizza: Savory Sweet and Satisfying

Growing up if I ever ate at Taco bell, I always had the same thing, a Mexican Pizza. I loved their Mexican Pizza. I had not thought about that pizza in a long time, until I saw a few different pins for Mexican Pizza.

After looking at a few recipes I decided on one, and made a few modifications. I knew that my home version would not be crunchy like Taco Bell's, but I was pretty sure it was going to be delicious. Turns out it was delicious, even more delicious than I though it would be.

I can't really tell you how it compares to Taco Bell's, because I have not had one of their's in a long long time, but I can tell you it is delicious, easy to make and come together quickly.

Mexican Pizza

Ingredients:

  • 1 pound ground turkey (or beef)
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1 teaspoon dried oregano
  • cayenne pepper, to taste
  • 6 flour tortillas
  • 1 cup refried beans
  • 1 cup red salsa
  • 1 cup green salsa
  • 3 cups shredded Mexican blend cheese
  • black olives, sliced
  • 3 roma tomatoes, diced
  • 2 green onions, sliced

Directions:

  1. Preheat oven to 400º F. Line a baking sheet with aluminum foil and spray with cooking spray.
  2. In a large skillet, over medium high heat, add the ground turkey and spices. Cook until the ground turkey is completely cooked and crumbled.
  3. Spread 1/3 cup refried beans on 3 tortillas and then place them on the prepared baking sheet. Evenly spread the cooked meat over the beans. Sprinkle 1/3 cup of the cheese over the meat and drizzle with 2 heaping tablespoons of red salsa over the cheese.
  4. Place another tortilla on top and press down light to create a flat and even surface. Spread 2 heaping tablespoons of green salsa over the tortilla. Sprinkle with 1/3 cup of cheese. Top the cheese with black olives, tomatoes and green onions. Sprinkle 1/3 cup of cheese on the top of each pizza.
  5. Bake for 8-12 minutes, or until the cheese is melted and edges of the tortillas are crispy. Cut each pizza into wedges and serve.
