Italian Pasta Salad

Italian Pasta Salad: Savory Sweet and Satisfying

This pasta salad is easy to make and it has a homemade dressing that is also easy to make. Plus you can make it ahead of time and let it sit in the refrigerator until ready to serve.

Italian Pasta Salad

Ingredients:

    Salad

  • 16 ounces bow tie pasta
  • 8 ounces hard salami, diced
  • 8 ounces mozzarella cheese, cubed
  • 6 ounce can black olives, drained and sliced
  • Dressing

  • 2 tablespoons red wine vinegar
  • 1 1/2 teaspoons lemon juice
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon dried basil
  • 1/4 cup olive oil

Directions:

  1. Cook the pasta according to the package directions. Drain and rinse with cold water. Allow to cool completely.
  2. In a large bowl combine the cooled pasta, salami, mozzarella cheese and olives.
  3. In a medium bowl whisk together the red wine vinegar, lemon juice, dijon mustard, black pepper, dried oregano and dried basil.
  4. Slowly whisk in the olive oil. Continue to whisk until everything is completely blended.
  5. Pour the dressing over the salad and toss to evenly coat the pasta.
  6. Refrigerate until ready to serve. After 2 or more days in the refrigerator you may need to add additional dressing as the pasta will soak up more of the dressing the longer it sits.
