Potato White Cheddar Sausage Soup

Potato White Cheddar Sausage Soup: Savory Sweet and Satisfying

This soup is very filling and delicious. It is a creamy potato soup with cheese and sausage, plus some vegetables. When making this soup you can use any type of precooked rope sausage. My family and I love smoked turkey sausage so that is what I used.

Potato White Cheddar Sausage Soup

Ingredients:

  • 1 tablespoon unsalted butter
  • 3 carrots, peeled and diced
  • 3 stalks celery, diced
  • 1 large sweet onion, diced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 3 pounds russet potatoes, peeled and diced
  • 64 ounces low sodium chicken broth
  • 2 cups half and half
  • 3 tablespoons all purpose flour
  • 8 ounces sharp white cheddar cheese
  • 2- 14 ounce packages of smoked sausage, diced
  • black pepper, to taste
  • Garnish

  • sour cream

Directions:

  1. In a large stock pot, over medium heat, melt the butter.
  2. Add in the diced carrots, celery and onion. Sauté until the vegetables start to soften.
  3. Add in the bay leaf and dried thyme. Add in the diced potatoes and chicken broth. Bring to a boil, then reduce the heat to a simmer. Partially cover the pot with a lid and cook until the potatoes are tender, but not falling apart.
  4. Remove the bay leaf.
  5. In a large glass measuring cup whisk together the half and half and flour. After the potatoes have softened slowly pour in the half and half mixture while stirring. Cook for 5-10 minutes, stirring occasionally.
  6. With an immersion blender, blend up about half of the soup or transfer half of the soup to a blender to blend and then pour back into the pot.
  7. Add in the cheese and sausage. Season with black pepper. Stir until the cheese has melted and sausage has warmed through.
  8. Serve and garnish with sour cream, if desired.
