Mexican Slaw with Cumin Lime Dressing: Savory Sweet and Satisfying

Typically when I am posting a recipe I like to post everything needed to make that recipe in one post. When I came across a recipe for fish tacos, it included a link to this slaw to go with the tacos. I thought about cutting down this recipe to make it work with the tacos and not have any leftovers. But for several reasons I decided to just make this recipe as is and include it with the tacos making a note that it would make more than needed for the tacos. 

When I finished making this slaw my husband commented on how much he likes slaw and snitched a bite. He then said it was really good, he could eat it by itself. Good I said cause there will be plenty leftover. So I then determined to make it a separate post since you do not have to eat on the fish tacos. Mexican Slaw with Cumin Lime Dressing

Ingredients:

    Mexican Slaw

  • 4 cups sliced purple cabbage
  • 1 cup sliced jicama
  • 1 cup grated carrots
  • 1/2 cup red bell pepper, sliced into thin strips
  • 1/2 cup yellow bell pepper, sliced into thin strips
  • 4 green onions, thinly sliced
  • 1 small jalapeño, finely diced
  • 1/2 cup fresh chopped cilantro
  • Cumin Lime Dressing

  • 3/4 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon chili powder
  • 1 tablespoon honey
  • 1/3 cup fresh lime juice
  • 3 tablespoons olive oil
  • fresh ground black pepper, to taste

Directions:

  1. Add all of the Mexican slaw ingredients to a large bowl and mix.
  2. In a small bowl combine the cumin, coriander and chili powder.
  3. Whisk in the honey and lime juice.
  4. Then whisk in the olive oil. Season with black pepper.
  5. Mix the slaw and dressing together, right before serving.
