Strawberry Blueberry Chicken Salad with Orange Vinaigrette: Savory Sweet and Satisfying

I love a good salad, especially when the weather starts to warm up. Even though I love it when the weather starts to warm up and especially when it gets hot, I am not the biggest fan of standing over a hot stove or having the oven on for long periods of time. So salads are perfect for this time of year. Even though I still had to cook the chicken, it did not require me to stand over the stove stirring or mixing. I could get the chicken going and walk away to work on the rest of the salad.

Strawberry Blueberry Chicken Salad with Orange Vinaigrette

Ingredients:

    Orange Vinaigrette

  • 2 oranges, juiced
  • 1 lime, juiced
  • 1/3 cup extra virgin olive oil
  • Chicken

  • 3 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • Salad

  • 1 pound romaine lettuce, washed, dried, and chopped
  • 1 pound strawberries, sliced
  • 12 ounces blueberries
  • 15 ounce can mandarin oranges, drained
  • 1 cup almonds
  • 12 ounce package queso fresco, crumbled

Directions:

  1. In a medium bowl whisk all of the orange vinaigrette ingredients very well and set aside.
  2. In a large skillet heat the olive oil over medium heat.
  3. Add in the chicken and pour 1/4 cup of the orange vinaigrette over top. Cook for about 8 minutes, then turn the chicken over and cook until completely done.
  4. Remove the chicken from the pan and allow to rest for 10 minutes.
  5. While the chicken is resting, add the lettuce to a big bowl.
  6. Top with strawberries, blueberries, oranges, almonds and queso fresco.
  7. Cut the chicken into bite sized pieces and place on the salad.
  8. Gently toss the salad to combine.
  9. Serve with the remaining orange vinaigrette.
