Mint Chocolate Chip Cookies

Mint Chocolate Chip Cookies: Savory Sweet and Satisfying

I am very cautious about making desserts with mint in them. They tend to turn out one of two ways for me, either tasting delicious or tasting like toothpaste. But since I like mint chocolate chip ice cream I decided to give these cookies a try.

Thankfully these cookies tasted delicious and not at all like toothpaste. The mint flavor was subtle and not overpowering, but enough for you to know it was a mint cookie. 

Mint Chocolate Chip Cookies

Ingredients:

  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 egg
  • 3/4 teaspoon peppermint extract
  • 3-4 drops green food coloring
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cream of tarter
  • 1 cup chocolate chips

Directions:

  1. Preheat the oven to 350º F. Line two large baking sheet with slipats.
  2. In a large bowl cream the butter and sugar together. Add in the egg, peppermint extract and food coloring. Mix until well combined and the color is consistent throughout.
  3. Add in the flour, baking soda, baking powder and cream of tarter. Mix just until everything is combined.
  4. Fold in the chocolate chips by hand.
  5. Scoop out small balls of dough and roll into a ball and place on prepared baking sheet.
  6. Bake for 10 minutes. Let the cookies cool on the baking sheet for 2 minutes and then transfer to a cooling rack to finish cooling.
