Mango Chipotle Barbecue Sauce: Savory Sweet and Satisfying

I have a favorite brand of barbecue that has many different flavors to choose from. So, I never really thought about making my own. But thanks to Pinterest I can now say I have made my own barbecue sauce and it was delicious. 

Mango Chipotle Barbecue Sauce
Ingredients:
1/4 of fresh mango, peeled and chopped
splash of water
1/2 cup ketchup
1 teaspoon chipotles in adobo sauce, finely chopped
1 clove garlic, minced
1/2 cup apple cider vinegar
1 tablespoon molasses
1/4 cup brown sugar

Directions:
In a blender add in the mango and a splash or two of water. Puree until smooth, adding more water if needed to reach a smooth consistency. Transfer puree into a medium saucepan.

To the saucepan, add in the ketchup, chipotle peppers, garlic, vinegar, molasses and brown sugar. Bring to a simmer over medium heat and continue to simmer for 5-7 minutes or until the sauce has reduced and thickened a little bit.

Brush sauce on chicken and cook your desired way. Baste the chicken with any remaining sauce while it is cooking.

Notes:
This will make enough sauce for about 4 chicken breasts. You can easily double, triple or even quadruple the recipe.
