Mango Chipotle Barbecue Sauce

Mango Chipotle Barbecue Sauce: Savory Sweet and Satisfying

I have a favorite brand of barbecue that has many different flavors to choose from. So, I never really thought about making my own. But thanks to Pinterest I can now say I have made my own barbecue sauce and it was delicious. 

Mango Chipotle Barbecue Sauce

Ingredients:

  • 1/4 fresh mango, peeled and chopped
  • splash of water
  • 1/2 cup ketchup
  • 1 teaspoon chipotles in adobo sauce, finely chopped
  • 1 clove garlic, minced
  • 1/2 cup apple cider vinegar
  • 1 tablespoon molasses
  • 1/4 cup brown sugar

Directions:

  1. In a blender add in the mango and a splash or two of water.
  2. Puree until smooth, adding more water if needed to reach a smooth consistency.
  3. Transfer puree into a medium saucepan.
  4. To the saucepan, add in the ketchup, chipotle peppers, garlic, vinegar, molasses and brown sugar.
  5. Bring to a simmer over medium heat and continue to simmer for 5-7 minutes or until the sauce has reduced and thickened a little bit.
  6. Brush sauce on chicken and cook your desired way.
  7. Baste the chicken with any remaining sauce while it is cooking.
Enjoy!!!

Notes:
This will make enough sauce for about 4 chicken breasts. You can easily double, triple or even quadruple the recipe.
