Jelly Doughnut Pancakes: Savory Sweet and Satsifying

Who doesn't love a good jelly doughnut? But who loves the work that goes into making one?

I have made a version of a jelly doughnut that was baked in a mini muffin tin, click here for the recipe, and of course it was good. So it only made sense to try jelly doughnuts in pancake form.

These pancakes are pretty simple to make, and taste like a jelly doughnut. So now we have the taste and flavor of a jelly doughnut in a delicious pancake, that is much easier to make than a traditional jelly doughnut.

Jelly Doughnut Pancakes

Ingredients:

  • 1 cup all purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoon unsalted butter melted and cooled slightly
  • 1 egg
  • 1 tablespoon vanilla extract
  • 3/4 cup + 2 tablespoons milk
  • 10 teaspoons raspberry jelly or jam
  • 1/4 cup powdered sugar
  • 4 tablespoon jelly or jam
  • 3 tablespoons boiling water

Directions:

  1. In a large bowl combine the flour and baking powder.
  2. Make a well in the center and add the cooled melted butter, egg, vanilla and milk. Whisk well until smooth. Set aside.
  3. In a shallow bowl add the powdered sugar and set aside.
  4. Heat a griddle and spray lightly with cooking spray.
  5. Pour slightly less than 1/4 cup of batter onto the pan.
  6. Spoon 1 teaspoon of jelly into the center of the batter and pour a little bit more batter over top of the jelly to completely cover the jelly.
  7. When the bottom side of the pancake is golden brown, carefully flip the pancakes over and cook until golden brown.
  8. As soon as the pancakes come off the griddle place them into the bowl with the powdered sugar and coat both sides, then place on a serving platter.
  9. Repeat with the remaining pancake batter.
  10. To make the jelly syrup, whisk together the jelly and water until well combined. Pour over the pancakes.
