Bacon Sriracha Potato Salad
Ingredients:
3 pounds red potatoes
4 slices turkey bacon
2 1/2 tablespoons white vinegar
3/4 cup mayonnaise
1/4 cup sour cream
1 1/2 tablespoons sriracha sauce
1/4 cup chopped green onions
paprika, to taste

Directions:
Rinse the potatoes and cut into 3/4 inch cubes. Place the potatoes into a large pot and cover with water until about 1 inch above the potatoes. Place on stove and turn heat to high. Bring the water to a boil. Reduce the heat to low and simmer, stirring occasionally for about 8 minutes or until the potatoes are fork tender. Drain the potatoes and transfer them to a large bowl and gently stir in the vinegar. Let the potaotes cool for about 15 minutes.

While the potatoes are cooking, cook the bacon your desired way.

In a small bowl combine the mayonnaise, sour cream and sriracha sauce.

Once the potatoes have cooled a bit fold in the mayonnaise and sriracha sauce. Crumble the bacon over top and sprinkle with green onions and paprika.

Enjoy!!!
