Spicy Chicken Caesar Club Sandwich


If we ever have fast food my first choice is always Arby's, I love their curly fries. My second choice is always Wendy's, they have the best chicken sandwiches. I love their crispy spicy chicken sandwich. Then Wendy's came out with a Spicy Chicken Caesar Club Sandwich and that became my new favorite sandwich there. So of course when I cam across a way to make it at home I knew I needed to try it.

This sandwich did not disappoint! It was delicious and tasted even better than Wendy's. Plus, it was probably a bit healthier too.

Spicy Chicken Caesar Club Sandwich

Ingredients:

Chicken

  • 2 boneless skinless chicken breasts
  • 1 cup buttermilk + 1 tablespoon, divided
  • hot sauce, to taste
  • 2 cloves garlic minced
  • 1 1/2 cups all purpose flour
  • 1 teaspoon black pepper
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup unsalted butter

Creamy Garlic Parmesan Sauce

  • 1 cup light sour cream
  • 1/4 cup + 2 tablespoons light mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1 lemon zested
  • 2 teaspoons lemon juice
  • 1/2 teaspoon black pepper

Sandwich

  • 1/4 cup shredded Parmesan cheese
  • 4 slices mozzarella cheese
  • 4 hamburger buns, toasted
  • Romaine lettuce
  • tomato slices
  • 4 slices turkey bacon, cooked

Directions:

  1. Cut the chicken breasts in half horizontally, making 4 chicken breasts.
  2. Place the chicken breasts into a medium bowl. Pour 1 cup of buttermilk over top of the chicken breasts.
  3. Add in your desired amount of hot sauce and the minced garlic.
  4. Mix the marinade and the chicken breasts. Cover and refrigerate for at least 20 minutes or up to 24 hours.
  5. Preheat oven to 400º F.
  6. Cut the butter into pieces and add to a glass 9x13 inch baking dish. Place the dish in the oven to let the butter melt while the oven preheats.
  7. Once butter has melted remove from the oven and spray with cooking spray to make sure it is well coated.
  8. In a shallow bowl combine the flour, black pepper, garlic, onion, paprika, Italian seasoning and cayenne pepper.
  9. Drizzle in 1 tablespoon of buttermilk and mix with your fingers creating little bits of flour pieces.
  10. Remove 1 piece of chicken from the buttermilk and remove as much of the buttermilk as possible, then place the chicken into the flour mixture. Coat both sides with the flour mixture, pressing down to make sure it sticks well.
  11. Place the chicken back into the buttermilk coating both sides. Let any excess buttermilk drip off. Then place the chicken back into the flour mixture again coating both sides well by pressing down to make sure it sticks.
  12. Place the chicken into the hot baking dish with the melted butter. Repeat with the remaining chicken breasts.
  13. Bake for 10 minutes then flip with a spatula and bake for an additional 10 minutes or until the chicken is completely cooked.
  14. While the chicken is baking add all of the sauce ingredients to a food processor and process until smooth and well blended. Set aside.
  15. As soon as the chicken is done, sprinkle each piece with 1 tablespoon shredded Parmesan cheese and then top with a slice of mozzarella cheese. Return the chicken to the oven until the cheese melts.
  16. Spread the Creamy Garlic Parmesan Sauce onto the top and bottom half of the buns.
  17. Place some lettuce on the bottom half of the buns, then a chicken breast, then place some tomato slices.
  18. Break the bacon slices in half and place two pieces on top of the tomatoes, then put the top half of the bun on.
