Mashed Potato Crunch

Mashed Potato Crunch: Savory Sweet and Satisfying

My family really enjoyed this mashed potato dish. It was flavorful and different than "normal" mashed potatoes.

Mashed Potato Crunch

Ingredients:

  • 2.5 pounds russet potatoes
  • 4 tablespoons unsalted butter
  • 1/2 cup milk
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups shredded sharp cheddar cheese
  • olive oil
  • 4 slices turkey bacon, cooked and crumbled
  • 2 green onions, chopped
  • sour cream

Directions:

  1. Preheat oven to 400º F. Grease a 15x10 inch (or other similar sized) non stick baking sheet with sides with olive oil. Be sure to spread the olive oil on the sides as well.
  2. Peel and cube the potatoes. Place the potatoes in a large pot and cover with water. Bring to a boil and simmer for about 20 minutes or until fork tender.
  3. Drain and add the potatoes back to the pot with heat set to medium to cook off the excess water. Stir the potatoes for 2 minutes then remove from the heat.
  4. Add in the butter, milk and black pepper. Mash the potatoes. Stir in 3/4 cup cheddar cheese.
  5. Spoon the potatoes into the prepared baking sheet and spread into an even layer covering the entire pan.
  6. Sprinkle the remaining 3/4 cup shredded cheese on top.
  7. Bake for 45-50 minutes or until the bottom and edges are browned and crispy. Sprinkle with bacon and green onions.
  8. Cut into squares and serve with sour cream, if desired.
