Barbecue Chicken Pasta
Ingredients:
- 4 slices turkey bacon, diced
- 1 boneless skinless chicken breast, cut into 1 inch pieces
- 2 cloves garlic, minced
- 1 medium yellow onion, diced
- 2 cups low sodium chicken broth
- 14.5 ounce can no salt added diced tomatoes
- 1/2 cup milk
- 1/4 teaspoon crushed red pepper flakes
- 3 cups rotini pasta
- black pepper, to taste
- 1/2 cup barbecue sauce
- 1 cup shredded cheddar cheese
Directions:
- In a large pot, over medium high heat, cook the bacon until crispy, about 6-8 minutes. Remove bacon and reserve 1 tablespoon fat and drain the rest. If you do not have 1 tablespoon of fat add some canola oil to equal 1 tablespoon.
- Add in the chicken and cook until golden on both sides, about 2-3 minutes.
- Add in the garlic and onions. Cook, stirring often, until onions are tender, about 3-4 minutes.
- Add in the chicken broth, diced tomatoes, milk red pepper flakes, pasta and black pepper, stirring to mix. Bring the mixture to a boil, cover and reduce heat to low.
- Simmer until the pasta is cooked, about 13-16 minutes.
- Stir in the barbecue sauce, cheese and bacon. Cook until cheese is melted and everything is heated, about 1-2 minutes.
