Three Cheese Pan Crust Pizza


I really like baking my pizzas in cake pans. This way they come out in that perfect circle form that I can never seems to achieve without the help of a the pan. I just love seeing my pizzas in a perfect circle instead of my misshapen circle.


This pan pizza has a thinner crust than a traditional pan pizza. It still has the delicious pan crust pizza taste, just with a little less dough.

Three Cheese Pan Crust Pizza
Ingredients:
3/4 cup hot tap water
1 teaspoon active dry yeast
1 teaspoon granulated sugar
1 3/4 cup all purpose flour
1/2 teaspoon salt
2-3 teaspoons olive oil
1/4 cup- 1/2 cup pizza sauce
1 cup shredded extra sharp cheddar cheese
1 cup shredded mozzarella cheese
1/4 shredded Parmesan cheese
pepperoni slices

Directions:
Measure the hot tap water in a glass measuring cup and then add in the yeast and sugar. Stir once to mix and let sit for 5-10 minutes.

In the bowl of a stand mixer, with the dough hook attachment, combine the flour and salt. With mixer running on low, slowly add in the yeast mixture. Increase the speed to medium and add just enough olive oil until the dough comes together.

Remove dough from the bowl and light grease the bowl. Return the dough to the bowl and cover with a clean kitchen towel and let rise until double in size, about 1-1 1/2 hours.

Preheat oven to 500ยบ F. Lightly grease 2- 9 inch round cake pans with olive oil.

Divide dough in half and place in pans spreading and stretching to fill the bottom of the pan and about 1/4 inch up the sides. If dough does not strength well, let sit for a few minutes and then try again.

Divide pizza sauce between the to pans and spread to cover the dough. Divide the cheeses between the two pans. Top with pepperoni.

Bake for 12-14 minutes. or until cheese is melted and crust is golden brown.
