Loaded Baked Gnocchi: Savory Sweet and Satisfying

My family said that this dish reminded them of macaroni and cheese. I feel it is more like a super cheesy mashed potato dish. You have gnocchi in a creamy cheesy sauce top with more cheese, bacon and green onions.

Loaded Baked Gnocchi: Savory Sweet and Satisfying

If you are not familiar with gnochhi, it is essential a little ball of dough made from potatoes and flour. It is sometimes referred to a type of small dumpling.

Loaded Baked Gnocchi
Ingredients:
1 pound potato gnocchi
2 tablespoons unsalted butter
1 clove garlic, finely chopped
2 tablespoons all purpose flour
1 cup milk
1/2 cup light sour cream
1 1/2 cups shredded cheddar cheese, divided
black pepper, to taste
2 green onions, chopped
3 strips turkey bacon, cooked and crumbled

Directions:
Preheat oven to 350ยบ F. Spray a 9x9 inch baking dish with cooking spray. Set aside.

Cook gnocchi according to package directions. Drain and arrange in a single layer on the bottom of prepared baking dish.

In a medium saucepan, over medium heat, melt the butter. Stir in the garlic and cook until lightly golden, about 1 minute. Whisk in the flour until it is completely incorporated into the butter. Slowly add in the milk, whisking constantly. Continue to whisk constantly until mixture thickens about 3-5 minutes. Add in 1 cup of cheese and stir until completely melted and incorporated. Remove from heat and stir in sour cream. Season with black pepper.

Pour cheese sauce over the gnocchi. Sprinkle with remaining cheese, green onions and bacon. Bake for 25 minutes or until cheese is melted and dish is bubbly. Remove from oven and let sit for 5 minutes.

Notes:
You can easily double this recipe, just use a 9x13 inch baking dish.
