I have been on the hunt for a really good cheesy breadstick recipe. Every time I find one that I think will be really good, it turns out good, but not good enough for me to keep and blog about. I was about to give up hope when I found this recipe. I am so glad to finally have a really good cheesy breadstick recipe to go to any time I want to make some, which is usually once a month when we have pizza night.
2- 2 1/2 cups all purpose flour
1 tablespoon granulated sugar
2 1/4 teaspoons rapid rise yeast
1/2 teaspoon salt
3/4 cup water
2 teaspoons olive oil
1 egg white
3 tablespoons unsalted butter, melted
2 cloves garlic, minced
8 ounces mozzarella cheese, shredded
In the bowl of a stand mixer with dough hook attachment, combine 1 cup flour, sugar, yeast and salt. In a microwave safe bowl or measuring cup combine water and oil. Heat on high 15 seconds at a time until water is very warm and about 120º-130º F. With the mixer running on low, slowly add in the water mixture, followed by the egg white. Beat for about 2 minutes. Add in another 1/2 cup flour and beat for an additional 2-3 minutes. Add in just enough flour, if needed, until the dough forms a ball.
With mixer still on low knead for about 3-4 minutes or until the dough is smooth and elastic and springs back with lightly pressed with a finger. Cover with a clean kitchen towel and let rest for 10 minutes.
Preheat oven to 450º F.
Grease a 9x13 baking sheet with sides well. Press and stretch the dough into the pan covering the entire pan. Cover with the kitchen towel and let rise for about 20 minutes or until doubled in size.
In a small bowl combine the melted butter and garlic cloves. Brush the mixture evenly over the top of the dough. Top evenly with shredded cheese. Sprinkle desired amount of Italian seasoning on top.
Bake for 11-15 minutes or until cheese is melted and golden brown. Cut into breadsticks.
