Hawaiian Haystacks


Hawaiian Haystacks: Savory Sweet and Satisfying

When I made this dinner I placed all of the ingredients into bowls and let everyone make their own. That way everyone could customize it to their liking, adding as much or as little of the toppings as they liked. My husband and I added in all of the toppings and loved it.

Hawaiian Haystacks

Ingredients:

  • 1 pound boneless skinless chicken breasts
  • 3/4 cup low sodium chicken broth
  • 1 can cream of chicken soup
  • black pepper, to taste
  • 1 1/2 cups rice
  • low sodium chicken broth, for cooking rice

Toppings

  • shredded cheese, of your choice
  • Chinese noodles
  • diced Roma tomatoes
  • chopped green pepper
  • canned diced pineapples in water, drained
  • canned mandarin oranges in water, drained
  • sliced black olives

Directions:

  1. Place chicken in a crock pot and add chicken broth, chicken soup and black pepper.
  2. Cook on low for 6 hours.
  3. Shred chicken and keep warm.
  4. Cook rice according to package directions substituting chicken broth for water.
  5. Place rice in a bowl, top with chicken and add toppings.

Notes:
I used my Homemade Cream of Chicken Soup to help reduce the sodium in this dish.

I used pepper jack cheese in this dish.
