Oh my goodness was this breakfast delicious. It was so good I did not want to share it with anyone. Spicy, cheesy eggs are a great way to start the day.
Jalapeño Popper Egg Bake
Ingredients:
- 5 eggs
- 1/2 cup milk
- black pepper, to taste
- 1 cup shredded cheddar cheese
- 1 cup turkey bacon, cooked and crumbled
- 1 jalapeño, thinly sliced
- 2 tablespoons reduced fat cream cheese
Directions:
- Preheat oven to 350º F. Spray a baking dish with cooking spray and set aside.
- In a medium bowl add in the eggs, milk and black pepper, whisking to combine.
- Stir in the cheese and bacon.
- Pour the egg mixture into prepared baking dish.
- Place little blobs of cream cheese and the slices of jalapeño around the top of the egg mixture.
- Bake for 25-35 minutes or until the eggs are cooked.
Notes:
Depending on the size of your baking dish you may need to reduce or increase the baking time.
