Bunny Eggs and Perfect Scrambled Eggs: Savory Sweet and Satsifying

I do not make scrambled eggs very often. I prefer dippy eggs, so I can dip my toast into the egg yolk. So I have never put much though into making scrambled eggs.

I had planned to make these bunny eggs, because who would not like eggs that look like a bunny, and to my surprise a pin on Pinterest showed up for the perfect scrambled eggs. Being intrigued by it I look at the recipe and decided to try it. Eggs, two kinds of cheese and cream, sounds like a good combination.

These scrambled eggs were better than any scrambled egg I have ever made. I discovered several reason for that. First off the cream and cream cheese adds a nice creaminess to the eggs. Secondly, I discovered that stirring the eggs less will result in a fluffier egg. Who would of thought, I have always stirred my eggs often, but turns out that is not the way to do it. So for delicious creamy and fluffy eggs this is the recipe for you.

Directions:

Perfect Scrambled Eggs
Ingredients:
8 eggs
1/3 cup heavy cream or half and half
1/4 teaspoon black pepper
2 ounces reduced fat cream cheese
1 cup shredded cheddar cheese
2 tablespoons unsalted butter

Directions:
Crack eggs into a medium bowl and whisk until the yolks are all broken and blended. Add in the heavy cream and black pepper. Whisk again until well blended. Add in the cream cheese in small blobs.

In a non stick skillet, over medium low heat or low heat, melt the butter. Pour in the egg mixture into the skillet and spread out the cream cheese blobs. Let the eggs cook for 1-2 minutes without stirring. Once the eggs have set a bit stir them one time and only one time. Let the eggs cook for 1 minute and then stir one time again. Add in the shredded cheese and then let the eggs cook and cheese melt for 1 minute. Stir one time. Let the eggs cook for 1 minute then flip the eggs over. Cook for 1 more minute or until the eggs are done.

Bunny Eggs
scrambled eggs
4 slices bacon, cooked
shredded cheese, preferably a white variety
fruit for the eyes and nose

Directions:
Divided the eggs into 4 bowls. Carefully cut the bacon in half and place them at the top of the eggs for the bunnies ears. Place fruit down just below the ears for the eyes. Just below the eyes place another piece of fruit for the nose. Place pieces of shredded cheese next to the nose for the whiskers.

Notes:
I used pieces of strawberries to create the eyes and nose, because that is what I had on hand. You could use other fruits like blueberries for the eyes and a raspberry for the nose.

You will want to use a white cheese for the whiskers since it will stand out better. I used cheddar since I already had some shredded for the eggs, but it blends in with the eggs too well.
