Chili Chicken

Chili Chicken: Savory Sweet and Satisfying

It will sometimes surprise me how such a simple and easy dish can be so delicious. I am not sure why it surprises me, because when the ingredients are all delicious it only makes sense they would create a delicious dish. Plus a dish does not have to be complicated to be good. I have made several complicated dishes that have not turned out nearly this good. Even knowing all that, I will still sometimes get surprised by an easy and simple dish, like this one.

Chili Chicken

Ingredients:

  • 6 boneless skinless chicken breasts
  • 2- 14.5 ounce can Italian stewed tomatoes
  • 2- 15 ounce cans low sodium chili with beans
  • sliced or shredded cheddar cheese

Directions:

  1. Preheat oven to 350º F.
  2. Place chicken in an ungreased 9x13 baking dish.
  3. Top with tomatoes and bake for 50 minutes or until chicken is just cooked.
  4. Spoon chili over top and bake an additional 10 minutes or until chili is heated through and chicken is completely cooked.
  5. Top with cheese and bake an additional 3-4 minutes or until cheese is melted.
