Peaches and Cream Ice Cream

Peaches and Cream Ice Cream: Savory Sweet and Satisfying

I buy my whipping cream and half and half at Costco, because it is so much cheaper than other stores and it also happens to be organic. However it also happens to come in a half gallon container. So I have to plan carefully and make a bunch of dishes were I need half and half and heavy whipping cream and of course it always includes a batch or two of ice cream.

Peaches and Cream Ice Cream

Ingredients:

  • 2 1/2 pounds yellow peaches, peeled, pitted and sliced
  • 1 tablespoon lemon juice
  • 3/4 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups half and half
  • 4 ounces reduced fat cream cheese, room temperature
  • 2 tablespoons vodka

Directions:

  1. Place freezer safe container for storing the ice cream in the freezer.
  2. In a medium bowl combine the peaches, lemon juice, sugar and vanilla. Let it sit out at room temperature for 30 minutes, then cover and refrigerate for at least 3 1/2 hours or up to 12 hours.
  3. Reserve 1 cup of peaches.
  4. In a blender combine remaining peaches and their juice, half and half, cream cheese and vodka. Process until smooth.
  5. Pour into your ice cream machine and churn according to manufacturer's directions.
  6. While ice cream is churning, coarsely chop reserved peaches and add in during the last 5 minutes of churning time.
  7. Take storage container out of the freezer and transfer ice cream into it. Cover and freeze.

Notes:
The vodka prevents the peaches from freezing too firm.
