Pancake Muffins with Sausage: Savory Sweet and Satisfying

I was so excited about this recipe, because my girls love pancakes. They also love muffins just as much as I do. My youngest daughter and I are both big fans of sausage. So, combine all of that together and I had a delicious breakfast.

Just make sure that you have some maple syrup to drizzle over the top. Somehow I did not have any maple syrup in my house and believe me I looked and looked and looked and just could not find any. Even without maple syrup these muffins were good, but the maple syrup would make them even better.

Pancake Muffins with Sausage


  • 1/2 pound breakfast sausage links
  • 1 1/2 cups milk
  • 4 tablespoons white vinegar
  • 2 cups all purpose flour
  • 4 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • maple syrup, for serving


  1. Preheat oven to 400ยบ F. Grease a muffin tin.
  2. Cook breakfast sausage according to package directions and cut into small pieces.
  3. In a small bowl combine the milk and vinegar and let sit for 5 minutes.
  4. In a large bowl sift together the flour, sugar, baking powder and baking soda.
  5. Add in the eggs, melted butter, milk mixture, and vanilla extract, stir to mix.
  6. Stir in cooked sausage pieces.
  7. Fill muffins tins 2/3 of the way full.
  8. Bake for about 15-16 minutes, or until and inserted toothpick comes out clean.
  9. Serve each muffin with a drizzle of maple syrup.
