Mashed Potato Puffs

Mashed Potato Puffs: Savory Sweet and Satisfying

These potato puffs are a great way to use up leftover mashed potatoes. Take the leftover mashed potatoes add a few ingredients, bake in a muffin tin and the leftover mashed potatoes are now transformed into a delicious side dish.

However, these Mashed Potato Puffs are so good, that you may just want to make mashed potatoes especially for this recipe.

Mashed Potato Puffs

Ingredients:

  • 2 eggs
  • 1/3 cup light sour cream
  • 1 heaping cup shredded sharp cheddar cheese
  • 2 tablespoon grated Parmesan cheese
  • 2 tablespoon sliced green onions
  • 3 cups mashed potatoes
  • black pepper, to taste

Directions:

  1. Preheat oven to 400º F. Grease a nonstick muffin tin. Set aside.
  2. In a medium bowl, whisk the eggs, then whisk in the sour cream.
  3. Stir in both cheeses and green onions.
  4. Add in the mashed potatoes, season with black pepper and mix well.
  5. Spoon potatoes into prepared muffin tin filling just to the top or slightly below.
  6. Bake for 25-35 minutes or until golden brown.
  7. Remove from the oven and let cool for 5 minutes in pan.
