S'Mores Cookies

S'Mores Cookies: Savory Sweet and Satisfying

Take all of the yummy flavors of a s'more and put them in a cookie and you have a S'more Cookie. A delicious and less messy way to enjoy a s'more. I have to admit I was quite surprised at how much these tasted like a s'more.

The original recipe calls for using Kraft Jet Puff Mallow Bits, which seem to be like the marshmallows bits you find in those little packages of hot chocolate. I did not use those and just used regular mini marshmallows. The regular marshmallows worked fine, they just melt and loose their shape where the bits do not.

S'Mores Cookies

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup graham cracker crumbs, about 6-7 full sheets
  • 1 1/3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 cup chocolate chips
  • 1 cup mini marshmallows OR mallow bits

Directions:

  1. Preheat oven to 350º F. Line two cookie sheets with a silpat or parchment paper sprayed with cooking spray and set aside.
  2. In the bowl of a stand mixer cream together the butter and both sugars until light and fluffy, about 3 minutes.
  3. Add in the egg and vanilla and beat for an additional 2 minutes.
  4. In a large bowl whisk together the graham cracker crumbs, flour, and baking powder.
  5. Slowly add the dry ingredients to the wet ingredients while mixing on low speed. Mix just until the dough comes together. Add in the chocolate chips and marshmallows and mix to combine.
  6. Place 1 1/2 tablespoon sized scoops of dough onto prepared cookie sheet leaving about a 1 inch space between cookies.
  7. Bake for 10-12 minutes.
