Cottage Broccoli Bake

Cottage Broccoli Bake: Savory Sweet and Satisfying

The combination of ingredients in this dish may seem strange, but let me tell you they actual work. They work so well together that they create an incredibly delicious side dish. So delicious that I probably could have eaten half of it all by myself.


Cottage Broccoli Bake

Ingredients:

  • 16 ounces low fat cottage cheese
  • 10 ounces frozen chopped broccoli, thawed and well drained
  • 3/4 cup shredded cheddar cheese
  • 7 ounce jar roasted red peppers, well drained and chopped
  • 4 eggs, beaten
  • 3 tablespoons grated Parmesan cheese
  • 3 tablespoons plain dry breadcrumbs

Directions:

  1. Preheat oven to 350º F. Spray a 9 inch pie plate with cooking spray.
  2. In a large bowl combine all of the ingredients well.
  3. Pour into prepared pie plate.
  4. Bake for 45 minutes or until center is set.
  5. Let stand for 10 minutes before cutting into slices and serving.
