Loaded Potato Bites

Loaded Potato Bites: Savory Sweet and Satisfying

Holy wow are these absolutely delicious. I just kept on wanting to eat more and more of them. They are the perfect little size. I made them as a side for dinner, but I could also see making as a part of a special breakfast.

Loaded Potato Bites

Ingredients:

  • 30 ounces frozen shredded hash browns, thawed
  • 2 eggs, lightly beaten
  • 7 slices turkey bacon, cooked and crumbled
  • 1 1/4 cups shredded pepper jack cheese
  • 2/3 cup sour cream

Directions:

  1. Preheat oven to 425º F. Line a baking sheet with a silpat or parchment paper.
  2. In a large bowl combine the potatoes, eggs, bacon, cheese and sour cream until well mixed.
  3. Use a small cookies scoop out the potato mixture and place on prepared baking sheet.
  4. Bake for 25 minutes.
