Honey Roasted Red Potatoes


These potatoes have a nice sweetness to them from the honey, but not too sweet. May seem like a strange combination, but it is very tasty and a nice change of pace when it comes to potatoes.

Honey Roasted Red Potatoes

Ingredients:

  • 3 pounds red potatoes
  • 4 tablespoons unsalted butter, melted
  • 6 tablespoons honey
  • 3 teaspoons ground mustard
  • 3/4 teaspoon black pepper

Directions:

  1. Preheat oven to 375º F.
  2. Rinse potatoes and pat dry. Cut potatoes into quarters and place them on a baking sheet.
  3. In a small bowl mix together the butter, honey, ground mustard and black pepper. Drizzle over potatoes and toss to coat well.
  4. Bake for 30-40 minutes or until tender.
