These muffins are loaded with flavor. They may be called banana coconut muffins, but there is so much more to them than banana and coconut. There is chocolate and toffee in these muffins as well.
Coconut, toffee, chocolate in a muffin with some banana thrown in to make them slightly healthier, oh and some cream cheese. Now that is a flavorful muffin!
Banana Coconut Muffins
Ingredients:
- 3/4 cup unsalted butter, softened
- 8 ounce package reduced fat cream cheese, softened
- 2 cups granulated sugar
- 2 eggs
- 4 ripe bananas, smashed
- 1 teaspoon vanilla extract
- 3 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups shredded coconut, divided
- 1 1/4 cups toffee bits
- 1/2 cup mini chocolate chips
- Preheat oven to 350º F. Spray two muffin tins well with cooking spray.
- In a large mixing bowl cream the butter, cream cheese and sugar.
- Add in the eggs and beat well.
- Stir in the bananas and vanilla extract.
- In a medium bowl combine the flour, baking powder, baking soda and salt.
- Slowly incorporate the dry mixture into the wet mixture.
- Stir in 1 cup coconut, toffee bits, chocolate chips.
- Fill muffin tins 3/4 full and sprinkle remaining coconut on top.
- Bake for 25-30 minutes.
- Cool for 5 minutes in muffin tins remove cupcakes and cool on cooling rack.
