Grilled Chicken with Lemon Basil Pasta: Savory Sweet and Satisfying

This dish is creamy and very refreshing. It seems strange to call a chicken and pasta dish refreshing, but it is because of the wonderful lemon flavor. A prefect dish for spring or summer.

Grilled Chicken with Lemon Basil Pasta

Ingredients:

Marinade

  • 4 tablespoons olive oil
  • 4 lemons, juiced
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon honey
  • 4 boneless skinless chicken breasts

Lemon Basil Pasta

  • 16 ounces penne pasta
  • 4 tablespoon unsalted butter
  • 3 lemons, juiced
  • 3/4 cup heavy cream
  • 1/4 cup half and half
  • 1/4 teaspoon black pepper
  • 1 1/2 cups Parmesan cheese, shredded
  • 20 basil leaves, chopped

Directions:

  1. In a medium bowl whisk together olive oil, lemon juice, dijon mustard and honey.
  2. Place chicken in a resealable bag and pour marinade over chicken. Close bag and turn to coat chicken.
  3. Place in refrigerator and marinate for 2 hours.
  4. Remove chicken from marinade, discard marinade, and grill chicken until completely cooked. Slice chicken.
  5. Cook pasta according to package directions. Drain and reserve 1 cup of hot pasta water.
  6. In the same pot the pasta was cooked in, melt the butter over medium heat. Pour in the heavy cream and half and half, stir until hot, but not boiling.
  7. Add in the cheese, stirring until completely melted.
  8. Add in the pasta and stir to fully combine.
  9. Add in the lemon juice and stir. If sauce is too thick add in as much pasta water as needed to reach desired consistency.
  10. Stir in half of the chopped basil.
  11. Serve the pasta, top with remaining basil and then sliced chicken.
