Coconut Chicken


I am not sure how this dish came to be, but I am sure glad someone created it. The coconut coating on the chicken is just crazy good. The crispy bread crumbs, the slightly crispy coconut covering a nice and tender chicken breast, is a delicious way to enjoy chicken.

Coconut Chicken

Ingredients:

  • 4 boneless skinless chicken breasts
  • olive oil
  • black pepper, to taste
  • 1/3 cup bread crumbs
  • 1/3 cup flaked coconut
  • 1/4 cup unsalted butter, melted

Directions:

  1. Preheat oven to 350º F. Place a baking rack on a baking sheet and spray with cooing spray.
  2. In a shallow bowl combine breadcrumbs and coconut.
  3. Brush both sides of chicken with oil and season with black pepper.
  4. Coat both sides of chicken in coconut mixture and place on prepared baking rack. Drizzle with melted butter. Bake for 40 minutes or until completely cooked.
