Tastes Like Thanksgiving Casserole Recipe


The name of this dish says it all. It tastes just like Thanksgiving all in one yummy casserole.


When making this dish instead of making the potatoes and stuffing like the recipe calls for you can always use left over mashed potatoes and stuffing. You will need approximately 5 1/2 cups prepared mashed potatoes and approximately 4 cups prepared stuffing.

Tastes Like Thanksgiving Casserole Recipe

Ingredients:

  • 6 medium potatoes, peeled and cut into chunks
  • 1/2 cup unsalted butter, cubed
  • 1 1/4 cups celery, chopped
  • 3/4 cup onion, chopped
  • 6 cups unseasoned stuffing cubes
  • 1 teaspoon poultry seasoning
  • 1/4 teaspoon rubbed sage
  • 1 cup low sodium chicken broth
  • 4 cups cooked turkey, cubed
  • 2- 10 3/4 ounces can cream of chicken soup
  • 1 teaspoon garlic powder
  • 3/4 cup light sour cream, divided
  • 4 ounces cream cheese, softened
  • 1/2 teaspoon black pepper
  • 1 1/2 cups cheddar cheese, shredded

Directions:

  1. Preheat oven to 350º F. Spray a 9x13 baking dish with cooking spray and set aside.
  2. Place potatoes in a large pot and cover with water. Bring to a boil, reduce heat and cover and cook for 10-15 minutes or until potatoes are tender.
  3. While the potatoes are cooking melt butter in a large skillet. Add in celery and onions and sauté until tender. Remove from heat.
  4. In a large bowl combine the stuffing cubes, poultry seasoning and sage.
  5. Stir in the broth and celery and onion mixture. Spoon into prepared baking dish.
  6. In another large bowl combine the turkey, soup, garlic powder and 1/4 sour cream. Spoon over stuffing mixture.
  7. When potatoes are done drain well. Transfer to a large bowl and mash.
  8. Beat in the cream cheese, pepper and 1/2 cup sour cream. Spread over turkey mixture. Sprinkle with cheese.
  9. Bake uncovered for 30-35 minutes or until heated through.
