Hard Rock Cafe Baked Potato Soup

I think the only thing I like about winter is enjoying a nice warm bowl of soup. This winter has been especially cold, snowy and long, I am so ready for spring to come. But until spring comes, I am going to continue to enjoy some delicious soup, like this one.

Savory Sweet and Satisfying: Hard Rock Cafe Baked Potato Soup

It is creamy, flavorful and just completely delicious. Does it taste like the one at Hard Rock Cafe? I do not know. I have not eaten at one in about nine years and even when I did eat there I do not think I ever ordered the baked potato soup. But that does not change the fact that this soup is delicious and worth making.

Hard Rock Cafe Baked Potato Soup

Ingredients:

  • 8 slices turkey bacon
  • 1 cup diced yellow onion
  • 2/3 cup all purpose flour
  • 6 cups low sodium chicken broth, warmed
  • 4 cups diced peeled baked potatoes
  • 2 cups heavy cream
  • 1/4 cup chopped fresh parsley
  • 4 cloves garlic, minced
  • 1 1/2 teaspoons dried basil
  • 1 1/2 teaspoons hot sauce
  • 1 1/2 teaspoons black pepper
  • 1 cup cheddar cheese, shredded
  • 1/4 cup diced green onions (white part only)

Garnish

  • turkey bacon
  • fresh parsley, chopped
  • cheddar cheese, shredded

Directions:

  1. In a large pot cook the bacon until crisp. Drain on paper towel and crumble. Set aside.
  2. Add the onions to the pot with the bacon drippings and cook over medium high heat for about 3 minutes or until soft.
  3. Whisk in the flour and cook for 4 minutes, whisking the whole time.
  4. Whisk in the chicken broth slowly and cook until thickened.
  5. Reduce heat to a simmer and add in the potatoes, cream, crumbled bacon, parsley, garlic, basil, hot sauce and pepper. Simmer for 10 minutes (do not boil).
  6. Add in the grated cheese and green onion. Cook until cheese melts.
  7. Serve and garnish if desired.
