Orange Vanilla Greek Yogurt Pancakes

Savory Sweet and Satisfying: Orange Vanilla Greek Yogurt Greek Pancakes

These pancakes had a very nice orange flavor to them. I did not get a lot of vanilla flavor from them, so the next time I make them I may try using vanilla Greek yogurt instead of plain to see if I can up the vanilla flavor.

Since you never know how much juice you will get from an orange, your batter may be a little thick. If this is the case add some more milk to thin it out some.

Orange Vanilla Greek Yogurt Pancakes

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 4 1/2 teaspoons baking powder
  • 2 teaspoons granulated sugar
  • 2 eggs
  • 3/4 cup plain non fat Greek yogurt
  • 1 cup fat free milk
  • 2 oranges, zest and juice
  • 2 teaspoons vanilla extract

Directions:

  1. In a large bowl combine both flours, baking powder and sugar.
  2. Add in the eggs, Greek yogurt, milk, orange zest, orange juice and vanilla. Mix well.
  3. Heat a non stick eclectic griddle.
  4. Spray the griddle with cooking spray and using a 1/4 measuring cup pour the pancake batter onto the griddle. Cook until bubbles start to form. Flip pancake over and cook until done.
