This dish is creamy, cheesy, and oh so yummy! It is an all around comfort dish. Just look at all of that cheese and bacon. Yummy!

Savory Sweet and Satisfying: Cheesy Chicken and Rice Skillet

Cheesy Chicken and Rice Skillet Dinner

Ingredients:

  • 1/2 pound turkey bacon
  • 4 tablespoons unsalted butter
  • 1/4 cup all purpose flour
  • 1/4 teaspoon black pepper
  • 1 1/2 cups low sodium chicken broth
  • 2 1/2 cups cheddar cheese, shredded, divided
  • 2 tablespoons hot sauce
  • 4 cups cooked white rice
  • 2 cups cooked shredded chicken

Directions:

  1. In a large oven safe skillet cook bacon until crispy.
  2. Remove bacon, set aside, and reserve 2 tablespoons bacon drippings in the skillet.
  3. In a medium saucepan, over medium heat, melt butter.
  4. Once the butter is melted whisk in the flour and black pepper until smooth and bubbly.
  5. Slowly whisk in the chicken broth. Increase the heat to high and continue to whisk until the mixture thickens.
  6. Reduce the heat to low and stir in 1 1/2 cups cheese. Stir in hot sauce, turn off heat and set aside.
  7. Add the rice to the skillet with the bacon drippings and stir to combine.
  8. Add in chicken, cheese sauce stirring to combine.
  9. Top with remaining 1 cup cheddar cheese and then top with crumbled bacon pieces.
  10. Place skillet under the ovens broiler for about 3-5 minutes until cheese is melted.
