I have been in the mood for burgers a lot lately, but was looking for a different side than my normal Baked Oven Fries and Spicy Oven Fries. Not that those fries are not super good, but I just needed a change and these potatoes provided it.
Cheesy Bacon Potato Rounds
Ingredients:
- 4 russet potatoes
- 1/4 cup unsalted butter, melted
- 8 slices turkey bacon, cooked and crumbled
- 1 cup cheddar cheese, shredded
- 1/2 cup green onions, chopped
Directions:
- Preheat oven to 400° F.
- Cut potatoes, with skins on, into 1/2 inch slices.
- Brush both sides of potato with melted butter, and place them on an un-greased baking sheet.
- Bake for 30-40 minutes, turning the potatoes halfway through the cooking time, until lightly browned on both sides.
- When potatoes are cooked, top them with bacon, cheese and green onions.
- Return to the oven and continue to cook until the cheese has melted.
