You may think peanut butter noodles will not taste very good, but I am here to tell you that they do in fact taste good. I was quite surprised by how much I enjoyed these noodles. It is not an overwhelming peanut butter flavor, but you definitely can taste the peanut butter.
Chicken and Broccoli Stir Fry over Peanut Butter Noodles
Ingredients:
- 3 boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 4 teaspoons sesame oil
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon sriracha sauce
- 2 cups fresh broccoli
- 2 tablespoons vegetable oil
- 12 ounces linguine noodles
- 1/3 cup creamy peanut butter
- 2 tablespoons low sodium soy sauce
- 1 tablespoon balsamic vinegar
- 1 tablespoon rice wine vinegar
- 2 tablespoons granulated sugar
- 1 tablespoon sesame oil
Directions:
- Cut chicken into bite sized pieces and place in a resealable bag.
- In a small bowl combine the soy sauce, sesame oil, honey, garlic and sriracha.
- Pour over chicken and refrigerate for 15 minutes.
- Cook noodles according to package directions. Drain well, reserving 1 tablespoon of the pasta water, and return to pan.
- In a large skillet, over medium high heat, heat 1 tablespoon vegetable oil.
- Add broccoli and cook for 1 minute or until the broccoli is bright green and crisp.
- Transfer the broccoli to a bowl and set aside.
- Add the remaining tablespoon of vegetable oil. Cook the chicken until browned and completely cooked about 5-8 minutes.
- While chicken is cooking, mix together the peanut butter, soy sauce, balsamic vinegar, rice wine vinegar, sugar, sesame oil and reserved pasta water.
- Add the peanut butter sauce to noodles and mix.
- Serve chicken and broccoli over the noodles.
