Chicken and Broccoli Stir Fry over Peanut Butter Noodles

You may think peanut butter noodles will not taste very good, but I am here to tell you that they do in fact taste good. I was quite surprised by how much I enjoyed these noodles. It is not an overwhelming peanut butter flavor, but you definitely can taste the peanut butter.

Chicken and Broccoli Stir Fry over Peanut Butter Noodles

Ingredients:

  • 3 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 4 teaspoons sesame oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon sriracha sauce
  • 2 cups fresh broccoli
  • 2 tablespoons vegetable oil
  • 12 ounces linguine noodles
  • 1/3 cup creamy peanut butter
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons granulated sugar
  • 1 tablespoon sesame oil

Directions:

  1. Cut chicken into bite sized pieces and place in a resealable bag.
  2. In a small bowl combine the soy sauce, sesame oil, honey, garlic and sriracha.
  3. Pour over chicken and refrigerate for 15 minutes.
  4. Cook noodles according to package directions. Drain well, reserving 1 tablespoon of the pasta water, and return to pan.
  5. In a large skillet, over medium high heat, heat 1 tablespoon vegetable oil.
  6. Add broccoli and cook for 1 minute or until the broccoli is bright green and crisp.
  7. Transfer the broccoli to a bowl and set aside.
  8. Add the remaining tablespoon of vegetable oil. Cook the chicken until browned and completely cooked about 5-8 minutes.
  9. While chicken is cooking, mix together the peanut butter, soy sauce, balsamic vinegar, rice wine vinegar, sugar, sesame oil and reserved pasta water.
  10. Add the peanut butter sauce to noodles and mix.
  11. Serve chicken and broccoli over the noodles.
