Cajun Chicken Alfredo

This dish is fabulously delicious. It is chicken Alfredo, but better. You have the creamy Alfredo sauce mixed with spicy chicken. So good!

Cajun Chicken Alfredo

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 1/2 tablespoons cajun seasoning
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups grape tomatoes, halved
  • 1/4 cup low sodium chicken broth
  • 1 1/2 cups half and half
  • 1 1/2 cups Italian cheese blend, shredded
  • 1/2 teaspoon black pepper
  • 1 pound fettuccine
  • pinch ground nutmeg

Directions:

  1. Cook fettuccine according to package directions and drain well.
  2. Rinse chicken breasts in cool water and pat dry. Pound each chicken breast to flatten a little. Sprinkle both sides of chicken breasts with Cajun seasoning, pressing to adhere.
  3. Preheat oven to 350°F.
  4. Heat 1 tablespoon butter and olive oil in a large skillet, over medium high heat, until butter begins to brown.
  5. Place chicken into skillet and sear on one side, until very brown, about 3 minutes. Flip chicken and sear on the other side until very brown, about 1-2 minutes. Work in batches if needed as to not over crowd the skillet.
  6. Place browned chicken onto a cooling rack on a baking sheet and bake for 10 minutes or until chicken is completely cooked. Remove chicken and cut into thin slices.
  7. If skillet looks dry add a bit more olive oil and reheat the skillet over medium heat.
  8. Pour in the chicken broth to de-glaze the pan and stir all of the brown bits off of the bottom of the skillet, about 1-2 minutes.
  9. Add in the garlic and tomatoes to the pan and sauté to soften and lightly caramelize, about 1-2 minutes, stirring occasionally.
  10. Reduce heat to medium low and pour in the half and half stirring constantly for 1 minute.
  11. Add in the pepper and remaining tablespoon of butter. Continue to stir the mixture while it simmers for 3-4 minutes, to slightly reduce the cream mixture.
  12. Remove from heat and add the cheese, stirring constantly until all of the cheese has meted and sauce is smooth.
  13. Add the fettuccine to the sauce stirring to mix.
  14. Add the chicken and mix again.
  15. Serve and sprinkle each serving with nutmeg.
