Three Cheese Potatoes


I really enjoy making these potatoes in a foil packet. Not only are they easy to make, but clean is super easy. 


A few notes when making these, make sure your foil is big enough, too many times have I made the foil too small and was barley able to close the foil. Also do not forget to spray the foil with cooking spray, or your potatoes will stick, not that I have done that once or twice.

Ingredients:

  • 2 1/2 pounds red potatoes, washed and cut into 1 inch cubes
  • 1 medium yellow onion
  • 3 tablespoons grated Parmesan cheese
  • 3 tablespoons green onions, chopped
  • 1/4 teaspoon black pepper
  • 2 tablespoon unsalted butter, cut into small pieces
  • 6 slices turkey bacon, cooked and crumbled
  • 1/2 cup reduced fat mozzarella cheese, shredded
  • 1/2 cup reduced fat sharp cheddar cheese, shredded

Directions:

  1. Preheat oven to 400° F.
  2. Get two pieces of foil out big enough to hold all of the potatoes and layer them to create a double thickness. Grease the the foil.
  3. In a large bowl combine the potatoes, onions, Parmesan cheese and pepper.
  4. Place the potato mixture on the prepared foil and top with butter pieces.
  5. Fold the foil around the potatoes and seal tightly.
  6. Bake for 1 hour to 1 hour and 15 minutes or until potatoes are tender.
  7. Carefully open the foil packet and top with bacon, green onions, and remaining cheese.
  8. Leave foil packet open and return to oven for about 3-5 minutes or until the cheese has melted.
