Spicy Sauage Pasta

What is better than a dinner that only requires one skillet? How about a incredibly easy and delicious dinner that only requires one skillet?

Spicy Sauage Pasta


This dish was creamy, flavorful and tasted just as good the next day. I love it when leftovers taste just as good as the day you made it!

Spicy Sausage Pasta

Ingredients:

  • 1 tablespoon olive oil
  • 14 ounces smoked turkey sausage, sliced
  • 1 1/2 cups yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups low sodium chicken broth
  • 10 ounce can Ro-Tel diced tomatoes with green chilies
  • 1/2 cup whipping cream
  • 8 ounces penne pasta
  • 1/2 teaspoon black pepper
  • 1 cup Monterey Jack cheese, shredded
  • 1/3 cup green onions, sliced

Directions:

  1. Heat olive oil, over medium high heat, in an oven safe skillet.
  2. Add sausage and onions, cooking until lightly browned, about 4 minutes.
  3. Add garlic and cook until fragrant, about 30 seconds.
  4. Add chicken broth, tomatoes, whipping cream, pasta and pepper, stir to combine.
  5. Bring to a boil, cover and reduce heat to medium low.
  6. Simmer for about 15 minutes or until the pasta is tender.
  7. Remove skillet from heat and stir in 1/2 cup of cheese.
  8. Top with remaining cheese and all of the green onions.
  9. Place under broiler until cheese is melted and bubbly.
